Fruit Pizza Dessert

This sweet treat is great in the hot summer thanks to fresh berries and a light whipped topping.

Sugar Cookie Base
 1 cup unsalted butter, softened
 1 ½ cups sugar
 1 egg
 1 ½ tsp vanilla
 2 ¾ cups flour
 2 tsp baking powder
 1 tsp salt
Frosting
 16 oz cream cheese, softened
 ½ cup sugar
 8 oz Cool Whip
Fresh Fruit
 1 pt fresh blueberries
 ½ lb strawberries

Make the sugar cookie base by creaming butter and sugar together in a mixer, then adding the remaining ingredients. The mix will be crumbly.

Press the dough into a half-sheet pan. It will be about 1/4" thick. Preheat the oven to 400 degrees. Bake until edges start to brown. Let cool.

Whip cream cheese and sugar until light and fluffy. Mix in Cool Whip until combined. Refrigerate until the cookie base is cool.

Rinse and dry the fruits. Cut strawberries as desired.

Spread a thin layer of frosting over the cooled cookie base. Decorate with fruit. Pipe remaining frosting into gaps. Chill until time to serve.
