Cheesesteak Mushroom Caps

Low on carbs and high on flavor. Hits all the comfort food itches!

 1 tsp canola oil
 2 lbs sirloin steak
 salt and pepper
 1 white onion, chopped into slivers
 ½ green bell pepper, finely chopped
To Serve
 8 large portobello mushroom caps
 8 tbsp mayo

Heat a cast iron skillet with canola oil until almost smoking. Salt and pepper each side of your sirloins and cook to the desired doneness. Set aside to "rest."

Add the peppers and onions to the skillet and cook for 1-2 minutes. Not tender, just a little sweated.

Clean the mushroom tops and scoop out the gills underneath with a spoon. Spray a little canola oil on the tops and place on a foil-lined sheet pan.

Spread mayo into each cap, if desired.

Slice steak very thinly and mix with peppers and onions. Spoon into mushroom caps.

Place a slice of provolone on top of each.

Bake at 350 until the cheese is super melty.

Pizza Variation

Instead of mayo, spread a little pizza sauce inside your mushroom cap. Fill with steak, peppers, onions and top with a healthy mound of shredded mozzarella.
