Season the chicken tenderloins with salt and pepper and cook through in a skillet. Remove and chop into bite-sized pieces.
Mix Thai chili sauce and sambal oelek in a small bowl. Whisk in corn starch.
Over low heat, toss the chicken, pineapple and sauce mix until heated through and sauce starts to thicken.
Serve with steamed rice.
